Crockpot Chicken Tortilla Soup










Chicken tortilla soup is so good!!!  Especially in these winter months when it is freezing outside and you just want to warm up!  Not only is this recipe tasty, it is healthy too.  I also make sure to cut the veggies up super small because my kids don't love the chunks, but they don't mind it when they are 'microscopic!' So, I encourage you to try this version of chicken tortilla soup! It won't disappoint!!!

CHICKEN TORTILLA SOUP - CROCK POT

Ingredients:
1 tsp ground cumin
1/2 tsp sea salt
2 cups chopped white or Vidalia onion
1 tsp oregano
4 cloves garlic, minced
2 medium green bell peppers, minced
4 14.5 oz cans of organic diced tomatoes with chiles (Can substitute freshly tomatoes with chiles if preferred)
8 cups organic, low-sodium chicken broth
2 cups frozen corn
1 can organic low sodium black beans
2 lbs uncooked boneless skinless chicken breasts



Directions:
In a large slow cooker, crock pot, combine all ingredients, stirring to ensure ingredients are mixed and well distributed.
Heat on low for 8 hours or on high for 4 hours.
Shred chicken and serve warm.
Add greek yogurt in place of sour cream or a low-fat, organic cheddar cheese and avocado for a little treat.

Tacos









I must say.. Mexican Food is my ALL TIME FAVORITE! We seriously eat it about 3 times a week at my house. No joke! I really think that my family and I are going to someday turn into a taco!  One thing we really RARELY do is actually go out to eat mexican food though because of all the added sodium and fat in the fajitas, enchiladas, etc! So, I have learned how to make our favorite meals in a clean way that is equally delicious! Now, we prefer 'momma's cookin' over the real deal any day! So, here we go. One super simple easy dinner that my kids LITERALLY request every single day!

TACOS :)



Easy Peasy Turkey Tacos!

1 pound ground turkey
1 packet taco seasoning
1/3 cup water

1. Brown and chop up the turkey meat on the stove.
2. Add the taco seasoning and water.
3. Let it simmer for about 5 minutes.
4. EAT!!

Ummm… how easy is that?

We serve them on tortillas or hard shell tacos! My kids love the hard shells! We put lettuce, tomatoes, onions, cheese, plain greek yogurt, black beans and taco sauce on ours. We really just load them up! It is a super healthy meal, so that is why we eat it so often! The black beans amp up the protein even more than just the meat alone and the fiber in the beans is always a plus! Lots of veggies is a must and I usually make some asparagus to go with them as a side.

Mini Pita Pizzas








MINI PITA PIZZAS


I am guessing that we are not the only family that has a love affair with pizza? My kids would literally eat it every single day! (Who am I kidding, so would I!!) So, with this recipe we can eat it and not feel crappy afterwards! My kids love it with or without the veggies.. it was a fight at first with vegetables, but now they don't even question them!! (Most of the time. KIDS ARE KIDS!! Sometimes they just want to argue ;) )

So, give these a try and I promise they won't disappoint!

Ingredients:
  • 100% Whole Wheat Mini Pitas
  • Olive oil
  • Shredded Part Skim Mozzarella Cheese
  • Natural Pizza Sauce
  • Any veggies!!!!   I have used sauteed mushrooms, spinach, red peppers, garlic, red onions, fresh tomatoes and basil.  You can also experiment with sliced chicken, ground turkey, ect.
Arrange pitas on a cookie sheet and lightly brush with oil.  Top with pizza sauce, veggies and mozzarella.  Bake on 400 degrees until cheese is melted.  Enjoy as an appetizer, snack or meal!  We serve with a big side salad!

Greek Feta Chicken









I am a little bit obsessed with this recipe. It is so good! I decided to try it a few months ago and it was a hit. You will find that I will only post recipes on my blog that are tried, true and delicious. I am a mom of two small kiddos and I also have a 'picky' husband. I cook very clean meals, but I like those clean eating meals to taste like they are cheat meals! Who says that clean eating doesn't taste good? I will definitely prove them wrong! So, here you go! Make this one and I bet that you'll love it and your family will too!

Greek Feta Chicken

Marinade: 
8 oz. plain nonfat yogurt
4 tsp. garlic, minced
1/3 bunch fresh oregano, chopped
1 Tbsp. chopped fresh parsley
1-1/2 tsp. fresh lemon juice
1 tsp. black pepper
1/4 tsp. salt
8 boneless, skinless chicken breast halves

Topping: 
6 oz. feta cheese
1 roma tomato, chopped
1/2 cup artichoke hearts, canned
1/2 cup sun-dried tomatoes, blanched and chopped
1 Tbsp. chopped fresh oregano
1 Tbsp. chopped fresh parsley


In a medium bowl, whisk together the marinade ingredients. Add the chicken, turn to coat and marinate in the refrigerator for at least 1 hour and up to overnight. Preheat the grill and set the oven to 350 degrees. Mix together the topping ingredients in a large bowl. Grill the chicken, basting with marinade, 4 minutes per side or until no longer pink. Arrange the chicken on a sheet pan coated with nonstick spray and place 1 rounded tablespoon of topping on each breast. Bake for 5 to 8 minutes or until the cheese is softened. 
Makes 8 servings.

Preparation Time: 1 hour, 15 minutes
