BBQ Chicken Drumsticks with Sweet Potato Fries

Do you have a meal that everyone in your family LOVES?! One that all of the kids ask for and everyone is happy and satisfied when you are all finished eating? 

Well- this is it for us! And this is what we are cooking up for our Memorial Day dinner!

Grilled Chicken Drumsticks-

Organic Chicken Legs- I get mine from Sam's Club in bulk!
Grill over charcoal for approximately 30 minutes or until cooked all the way through. 

Remove from grill and place in a large tupperware container. Add 1/4 cup Organicville BBQ sauce (or any clean eating BBQ sauce of your choice). Put the lid on the container and SHAKE SHAKE SHAKE!!!!

Remove lid and VIOLA!! Chicken is ready!

While cooking the chicken- bake the sweet potato fries

You can make your own or do like I do-- I buy ALEXIA BRAND SWEET POTATO FRIES! They are in the freezer section and they are clean as well. 

Bake about 25 minutes on 425 degrees! I drizzle a little bit of EVOO onto the cookie sheet before placing the fries on it! Makes them a little crispier when baking. 


Organic spring mix (again- I buy mine from Sam's Club)
slice up some baby sweet peppers and we top ours with a little bit of oil and vinegar! 

And- there you have it! A dinner that takes less than 30 minutes that everyone will LOVE!!!

Worlds BEST Taco Salad

I want to share this amazing recipe with you all! It is literally the best taco salad I have ever made and it is HEALTHY! Yes- no guilt, but the taste makes it feel like I'm totally cheating! What makes it even better- it is 100% 21 Day Fix APPROVED!!!

So- this is also kid tested and hubby approved! Can't get much better than that!

1 Green Container (1 Cup) baby spinach or spring mix lettuce
1 Green Container (1 Cup) sliced peppers- I use baby sweet peppers and onions
1 blue container (about 1/4 cup) of avocado and mexican cheese
1 Red Container (3/4 cup) of ground turkey with taco seasoning
1 Yellow Container -- I improved and guessed it would be about 8 blue corn organic chips
And I used hot sauce or salsa as the dressing!!!

SO MUCH FLAVOR!! And this is out of this world amazing!!!

What A Difference 2 Years Can Make!


May 6, 2013. I signed up as a Beachbody Coach. - the big picture in the collage is my VERY FIRST CHALLENGE GROUP POST!!! 

I remember it took me days to actually post it. It took me over 30 minutes to hit enter after I got the courage to just DO IT! After I hit submit- I CRIED and slammed my computer screen shut bc I was waiting for the negative comments. The backlash... But- it never came! I was SO HUMBLED that I had support! That was the first step of my journey.

I had no idea where it would take me. To be honest-- I thought that it was way too good to be true and I didn't even have a single goal for myself. I kind of messed around for a couple of weeks until I heard this 'TEAM CALL' that I decided to finally get on one Monday night. 

The host of the call was Melanie Mitro. She talked about how she was a mom of 2 boys from PA. She built her business from her kitchen table with a toddler and an infant. She planned her days. She talked about how much her income was just from helping other people. And then she said something that has stuck with me since that very moment I heard it.

She said.-- "WHY NOT YOU." She was right? Why couldn't I be successful in life? Why couldn't I decide to do something more? Why couldn't I MAKE IT TO THE TOP? 

So from that moment on... I studied the leaders. I committed to helping ONE PERSON with this! I put my heart and soul into taking this seriously and I decided that NO MATTER WHAT HAPPENED.. I was going to set small goals for myself each month, take baby steps and ACHIEVE THEM. NON NEGOTIABLE.

This was for my family. This was for me being able to stay at home with my kids and not have to put them in daycare. This was for me to be at home when my husband was not deployed. This was to help our family get out of a really ugly financial situation. THIS. WAS. IT.

And honestly... now looking back. HOW THANKFUL I AM THAT GOD PUT THIS IN MY LIFE TWO YEARS AGO!! Blessed. Humbled. Grateful. The list goes on.

In two years Beachbody has:

I learned how to set goals and find myself
Pay for groceries
Pay for monthly bills
Help over 1,000 people on their health and fitness journey
Paid for my husband and I to go on several all expense paid vacations/trips.

I have met the CEO's of our company. HUGGED THEM! SO cool!
I have met every celebrity trainer and worked out with them. PINCH ME!
I have achieve Success Club every single month EXCEPT for June 2013.

I am a 7 Star Diamond ELITE COACH!
I have achieved the status of TOP COACH in the state of Mississippi.
I have earned the title of motivational speaker.
I train brand new coaches to become leaders and learn how to grow a successful business.

We have met the best friends of our lives!

Personally- my FAITH, my MARRIAGE, my LIFE is better than I could have ever DREAMED it would be. Seriously. DREAMS DO COME TRUE.


TO DATE- We have paid off over $50,000 worth of debt in the last year and a half. -- THANK YOU BEACHBODY!

Im sure there is so much more I could list! These are just a FEW things that have happened over the last 2 years and I KNOW it is just going to get better and better!!

The BEST Pizza Ever!

So let's face it. Pizza is good! It is probably one of the most eaten foods in America! Why in the world would anyone want to stop eating it, even when they are working on losing weight? I don't think that we have to give it up! Ever ;) I think we just have to tweak it a little bit!

So we used to load it with fatty meats- pepperoni, sausage, bacon, etc... but not anymore! Here is our recipe that even the kiddos will eat!

First- we use a STORE BOUGHT PIZZA CRUST! Yes- we do. Okay- do I KNOW that homemade is better for us? Yes. Do I KNOW that we should do the cauliflower crust- sure! But in all honestly- I DON'T LIKE IT. (There I said it ;) ) So, you know what? Our pizza crust we use is not super 'clean' but for once a week saving us from going through a Dominos or Pizza Hut- this takes the cake! We are human and just do our best!

So- we use THIN CRUST! It is super thin and the brand name is Mama Mary's. We really love to get the little personal pan size ones too and let our kids make their own! It's fun and gets them involved in making healthy choices for their toppings.

We lay out the crust and then add a drizzle of EVOO to the top and spread it around.

Next- sauce! We do choose an organic pizza sauce- it is honestly whatever brand we can find on sale or that they have at the store. ANY BRAND WORKS! it's just sauce!

Then we sprinkle the sauce covered crust with some garlic powder and onion powder.

Then comes the mozorella- again- any kind! I do buy the shredded cheese. Again- quick, easy and it works.

Then we load it with HEALTHY OPTIONS!

I do turkey pepperoni bc our kids love it. Then we always have mushrooms, sliced colored peppers, banana peppers, onions and whatever we feel like! That is it most of the time. Sometimes we get funky and do a hawaiian pizza! Really whatever you want- just choose wisely to get your veggies in!

Then-we have a size of salad or asparagus! And usually a La Croix sparkling water to make us feel like we are drinking some pop with it ;)

So- there you have it! Our favorite meal- revealed!!
